Chicken & Squash Skillet

Ingredients:
1lb cooked, cubed all natural, skinless chicken breast
2 medium squash
2 medium zucchini
1 medium onion
Lg. can of diced tomatoes (28oz.)
1 cup gf white or brown rice
1 tbsp. olive oil
2 tbsp. oregano or to taste
fresh garlic or garlic salt to taste
1. First, cook the chicken thoroughly and cube, set aside.
2. Cut up onion, squash, and zucchini into slices.
3. Use large skillet/pan, and pour in olive oil.
4. Set pan to medium on stove, thrown in all cut veggies, and cover.
5. After veggies have cooked about 10 min., throw in chicken and canned tomatoes, then sprinkle in garlic
desired ( I put in 3 cloves), or use garlic salt, and oregano.
6. Put lid back on a let cook up until veggies are tender, about 25 more min.
7. Make rice in separate pan. Brown rice takes about 1 hour so be prepared. But it is sooo good!
8. After veggies are to desired tenderness, serve over rice on plate.
9. Eat and enjoy. Yum!
